Wild West Gourmet is a small-batch food business based in Pakotai, Northland, creating bold, practical, flavour-packed products for real kitchens.
We make Worcester sauces, relishes, chutneys, flavoured salts, and everyday gourmet additions designed to help people bring more flavour to the table without needing complicated recipes or fancy ingredients.
Our range is made for home cooks, BBQ lovers, platter builders, busy families, food gifters, and anyone who wants to make a simple meal feel a little more special.
Who we are
Wild West Gourmet is owned and run by us, Debbie McQuillan and Graeme Bratty.
Debbie is The Creator, the one behind much of the website, marketing, product ideas, storytelling, and customer connection. Graeme is The Treasurer, bringing his accounting background, practical thinking, and steady hand to production, pricing, planning, and the numbers that keep the wheels turning.
Together, we are building Wild West Gourmet with care, humour, hard work, and a very real love of good food.
Our Story
We purchased Wild West Gourmet in December 2023, drawn to the quality of the products, the reputation of the Worcester sauce, and the opportunity to grow a small New Zealand food business in a way that felt true to us.
Since then, we have rebranded, refined, tested, tasted, learned, stretched, and worked to build a range that feels generous, approachable, and proudly made here in Northland.
Our commercial kitchen is based on our land in Pakotai, where we live close to the bush, collect and filter our own rainwater, manage our own wastewater on site, and use solar power as part of our everyday life. That connection to place shapes the way we think about business, food, and the future.
We are not trying to be big for the sake of being big. We are trying to build something sustainable, useful, and full of flavour.
What we make
Our best-known products are our small-batch Worcester sauces, including our classic Worcester Sauce, Habanero Worcester, and Ghost Pepper Worcester. They are rich, savoury, deeply flavoured, and made without anchovies, making them vegan friendly.
Alongside the Worcester range, we make relishes, chutneys, and seasonings that are designed to be easy to use and easy to love. Think cheeseboards, burgers, BBQs, sandwiches, roast veges, marinades, glazes, dips, dressings, and those “what can I add to make this better?” kitchen moments.
We call it accessible gourmet: proper flavour, made for everyday cooks.
What matters to us
We care about making products with character, using good ingredients, working in small batches, and creating food that people reach for again and again.
Where we can, we choose locally grown Northland produce first. We also look for ways to reduce waste, make better use of what is available, and build a business that fits our values as well as our ambitions.
Our work is guided by three simple things:

Wild West Gourmet is made in Northland, sold online, and stocked by a growing number of retailers around New Zealand. You will also find us at selected markets, pop-ups, in-store tastings, and food events, sharing our range and helping people discover new ways to use it.
We love seeing our products become part of people’s everyday meals, weekend BBQs, family platters, special gifts, and kitchen experiments.
